Quick Fried Cauliflower

1 small head (or 1/2 large head) cauliflower1 medium onion3 cloves garlic1 1/2 tablespoons olive oil1 teaspoon curry powder1/2 teaspoon cracked black pepper1/4 teaspoon salt
Rinse cauliflower, remove and discard outer leaves and core, and cut into bite size pieces. Peel onion, cut it in half lengthwise, then cut it into slices. Peel garlic, then shred finely. Pour oil into a large skillet or wok over medium-high heat. When oil is hot, add cauliflower, onions and garlic. Cook, stirring occasionally until cauliflower starts to brown. Turn heat to medium low, cover and cook undisturbed for five minutes. While cauliflower is cooking, combine spices thoroughly. When the five minutes are up, remove cover and sprinkle spices over the cauliflower. Stir-fry vigorously for one more minute to evenly distribute spices. Serve. This recipe makes 4 servings as a side dish, or two servings as a vegetarian main course.
