roasted asparagus with egg

Ingredients
7 spears Fresh Asparagus, woody ends trimmed1 tsp Extra Virgin Olive Oil 1 tsp Balsamic Vinegar 2 large Eggslight shaving Parmesan Cheese
Directions
preheat oven to 425.

toss asparagus with olive oil. arrange into a baking dish just large enough to hold them in a single layer. roast for approx 10-12 minutes. remove from oven and drizzle with balsamic vinegar immediately.

slightly separate a couple of the stalks and break eggs into gap. return to the oven for another 7-9 minutes depending on the doneness you prefer.

garnish with shaved parmesan. sprinkle with your favorite salt. i used a smoked sea salt.
