24.0 oz Chicken Breast, Boneless Grilled (6oz/170gm)3.0 slice (1 oz) Provolone Cheese8.0 serving Basil Pesto (2 tbsp)7.5 oz Against the Grain gluten free baguette2.0 tbsp Canola Oil0.25 cup Cornstarch4.0 serving Tomatoes, Roma small (2-2.5" diameter; whole)4.0 oz Mozzarella Cheese, part skim milk1.0 tbsp Oregano, ground
Slice baguette in 1/4 inch slices, layer half on bottom of a glass 13"×9" baking dish. Spoon half the pesto on the baguettes, then layer with provolone. Cut chicken in small pieces, dredge in cornstarch, and sauté over medium high heat, three minutes per side. Layer chicken on top of provolone, then layer sliced roma tomatoes, the rest of pesto, then sprinkle half of mozzarella. Layer the rest of the baguettes, then rest of mozzarella, sprinkle oregano on top. Bake at 400°F for 30 minutes.
