Ingredients
1 cup uncooked long grain rice1 Tbls peanut oil1 Tbls chicken bouillon granules2 1/4 cups water1 stalk celery, chopped1 orange bell pepper, chopped1/2 small vidalia onion, chopped1 clove garlic, minced2 tsp sesame oil1 cup fresh pineapple, crushed2 green onion stalks, chopped1 1/2 Tbls. soy sauce
Directions
1. Combine peanut oil, bouillon and water in saucepan. Bring to a boil. Add Rice. Simmer 20 minutes.

2. Preheat saute pan with sesame oil and cooking spray. When hot, add celery, pepper, onion, and garlic. Saute until soft, about 10 minutes.

3. Combine cooked rice and vegetables with pineapple, green onion, and soy sauce. Toss and serve.

    This was fabulous! It made a ton - when the recipe says 6 servings, it means it! We had it with orange-ginger chicken - it would be a great one-dish meal with chicken cubes thrown in, too. - 7/25/08
