Beef & Greens Egg Bites

Ingredients
6 large Egg, fresh, whole, raw 16 oz Ground beef, lean 1 serving Nature's Greens, Collard Greens, 3 Cups 2 cup Spinach, fresh 1 tbsp Kikkoman Less Sodium Soy Sauce 1 tbsp Nakano - Rice Wine Vinegar (Natural Flavour) (by VIKING_BEAR) 1 pat (1" sq, 1/3" high) Butter, salted 3 oz Goat Cheese, Soft
Directions
Brown ground beef - add greens until withered and stems soft - add soy sauce and vinegar, salt & Pepper and garlic powder to taste - set aside and allow to cool - Once cool, beat eggs and stir in with goat cheese.
Oven 350
Spray 24 minimuffin tray with nonstick spray - scoop a generous tablespoon of filling into each section of pan -
bake at 350 until egg is cooked through and "bite" is firm to touch - do not overbake.
Cool 10 minutes - remove from pan and store in airtight container in refrigerator.

Serving Size: Makes 24 mini-muffin bites
