Chicken Slow Cooker Stew

Ingredients
1 or 2 Bell peppers (Green, Red, Yellow, Orange), diced5 stalks, small (5" long) Celery, chopped around 50 baby carrots 5 cloves Garlic, minced1 or 2 Red Onions , chopped20 thigh, bone and skin removed 2.5 cups PC Pho Broth or similar stock 2 cans Aylmer Diced Tomatoes with Italian Spices 0.25 cup Corn Starch
Directions
Put all ingredients into slow cooker and cook on low for 5+ hours.
Half an hour before serving, add corn starch or similar and increase heat to thicken.
Serve with Fresh bread, Rice, noodles or on its own
