Lentil Chicken Soup

Ingredients
5 stalks Celery, finely diced1/2 large Onion, finely chopped2 cloves Garlic, minced5 medium Carrots, peeled and finely diced1 lb boneless, skinless, Chicken Breast 1 lb dried Lentils, cleaned and sorted8 cup Chicken stock or broth28 oz can Diced Tomatoes, no salt added 2 tsp Curry powder 2 tsp Cumin seed
Directions
Spray a large pot with cooking spray. Add the carrots and saute for two minutes. Add the celery, onion and garlic and saute five minutes. Add the chicken and and cook until lightly browned. Add the remaining ingredients except for the tomato. Bring to a boil, then reduce heat, cover and simmer 20 minutes. Add the can of tomatoes with the juice. Cook another 15 minutes or until lentils are tender.
