Ingredients
Cheese Cake Filling32 oz Cream Cheese4 large Eggs1 tsp Vanilla Extract1 1/4 cup Pyure Bakeable Stevia Blend1/3 cup Heavy Whipping Cream1/4 fl oz Lemon Juice1 Tbsp lemon zestCrust2 cups Almond Flour1/3 cup Pyure Bakeable Stevia Blend6 Tbsp Butter, unsalted (melted)1 Tbsp lemon zest
Directions
Crust: 1. Mix almond flour, stevia, zest and melted butter. 2. Press into bottom of 6 4-inch springform pan. Set aside. Filling: Make sure all ingredients are at room temperature. 1. Beat cream cheese on low speed until light and fluffy. 2. Add stevia 3. Add each egg, one at a time, beating on low after each addition. 4. Mix lemon juice and zest. 5. Spread cream cheese mixture over crusts. Cooking: 1. Bake at 350 degrees for 1 hour in a shallow pan with a water bath. If top has browned, turn oven off. If not yet browned, cook until browned then turn off oven. 2. Leave cheesecake in oven with door ajar for an hour. Then, remove from oven and cool completely on a wire rack. 3. Chill at least 24 hours before serving. Serving Size: 6 4 inch cheesecakes
