Wonder Weed Salad

Ingredients
1 cup Purslane (raw) washed, large stems removed cucumber peeled, raw 1/2 cucumber 1/4 cup Beet greens, fresh 2 serving Tomatoes, Roma small quartered 2 medium Tomatillos quartered 1 cup Yogurt Plain Greek Yogurt, non-fat 1/4 cup Lemon Juice 1 tsp Garlic 1 1tsp Olive Oil 1 dash Pepper, black
Directions
Combine vegetables. DRESSING Puree together Greek yogurt, oil, garlic, lemon juice and pepper. Top prepared veggies and mix well. Refrigerate at least one hour and serve chilled.
