Low-cal Rhubarb pudding

6 stalks chopped Rhubarb12 packets Splenda No Calorie Sweetener1 tsp guar gum (powder)1/4 cup Craisins (dried sweetened cranberries)1/4-1/2 cup water as needed
(guar gum is not pleasant when allowed to clump and become wet - follow directions to avoid this!)
put rhubarb and craisins in microwave safe dish with lid. sprinkle with guar gum and shake or mix slightly. put lid on and microwave on high 7 1/2 minutes. stir in splenda and water if needed.
Makes 4, approx. 6oz servings
Can be served hot over ice cream or warm or chilled on it's own.
it would also be very good with 1 cup fresh strawberries instead of the craisins. Omit the water in this case!
