Ingredients
1 lb of ground turkeyEmeril's Italian Essence1 lb of Fat Free Mozzarella1 Jar of Classico Fire Roasted Tomato and Garlic Pasta SauceFresh Ground Pepper
Directions
In a large casserole dish poor 3/4 of the jar of spaghetti sauce into dish. Stuff each dry manicotti shell with Turkey seasoned with Italian Seasonings and lay in sauce. (Season ground turkey accoring to dietary need.) Fill jar with water and shake. Then poor the water and 1/4 of sauce blend into casserole dish. Cover with foil. Bake for 50 minutes at 385 degrees. Take off foil and poor 1 pound of low-fat cheese on top of casserole dish. Bake unconvered for another 15 minutes. Pull out of oven and let cool for a little bit, grate fresh pepper over dish and serve. Makes 14 stuffed shells and serve 2 shells per person.

    Okay, I'm changing the name of this meal to 'Magic Manicotti'. I've been eating it for lunch and sometimes dinner all week and I've lost 4 pounds. It is so easy to make and tastes delicious. I added about a 1/2 cup of the cheese to the turkey after I cooked it, to aid in stuffing the shells. YUM! - 3/5/09

    I had to read the recipe a couple of times to understand it. The number of manicotti should be in the ingredients. It was very tasty though. I had to reduce it for 2 people though. I make it for 2 days. - 7/30/08

    Excellent! I browned the ground turkey, then stirred some sauce into it along with the spices and a little bit of cheese. I filled the dry manicotti and had meat leftover so I just dropped it into the casserole dish. I didn't use anywhere near a pound of cheese. - 1/1/12

    Did not care for the fat free cheese, will use low fat next time. Also, do not think the manicotti noodle nutrition was included in the serving calculations.Will try again with a little 'tweaking'. - 3/31/09

    I made this 2x already and we loved it! Its very tasty. I'd recommend maybe less cheese, but other than that, its super easy to make & delicious. - 1/24/09
