Egg Roll in a Bowl

Ingredients
1 lb Ground Turkey (or ground meat of choice)1 Red bell pepper (diced)1 tbsp Sesame Oil 6 Scallions, thinly sliced10 oz Shredded cabbage 1 cup Shredded carrots 3 tbsp Soy Sauce 1 tbsp Rice Wine Vinegar1/2 tsp Ginger, ground 2 tsp Garlic powder Salt and pepper to taste
Directions
1. In a large saute pan, heat the sesame oil over medium-high heat. Add the diced red pepper and saute for 4 minutes, until softened slightly. 2. Add the ground pork and scallions to the pan and cook about 5 minutes longer, until the meat is cooked through and no pink remains. 3.Stir in the cabbage, carrots, coconut aminos or soy sauce, rice wine vinegar, ginger, garlic powder, and salt and pepper (to taste) to the pan. Cover and cook 5 minutes longer. Enjoy!
