Broccoli cauliflower cheesy casserole

Ingredients
8 oz Cheddar Cheese 8 oz Cheese Colby Jack Cheese 8 oz Cream Cheese 4 tbsp Heavy Whipping Cream 6 medium slices, cooked (raw pro Bacon, pork, microwaved 1 clove Garlic 1 tsp Salt 1 tbsp Pepper, black 1 medium (4-1/8" long) Scallions, raw - sep. bulb from greens2 cup Cauliflower, raw 2 cup, chopped or diced Broccoli, fresh 2 tsp. onion juice- optional and lowers the carb count instead of adding onions or more scallions
Directions
Preheat oven to 350 degrees
Steam broccoli and cauliflower florets until tender, about 5 minutes.
While broccoli and cauliflower steam, cream together 6 oz of the shredded cheddar, 6 oz of the colby Jack, cream cheese, and heavy cream
Stir in sliced green onion bulb only (save greens to top the casserole with), chopped bacon, and garlic
Set aside
Drain any liquid from steamed cauliflower and add to cheese mixture
Stir cauliflower and cheese mixture together
Taste for seasoning, and add as necessary
If you want a finer texture, give a few mashes with the potato masher
Pour into a 2-3 quart casserole and sprinkle on remaining cheddar and colby/Monterey Jack cheese
Cover dish with foil and bake for 25 minutes; remove foil and continue to bake until cheese is brown and bubbly
