Pulled Tomato chicken, crock pot

Roasting chicken2 Small OnionsWhole canned tomatoes, 28 oz 1 can Cream style corn ( can add fresh or frozen for added health benefits ) Carrots, canned, (I go with what I've got in the house ,can use fresh large carrots sliced)2 cups peas1 Sweet potato, cubed Salt and pepper to tasteAny seasoning of choice ( oregano, sage, etc. )
I used a small roasting chicken, and quartered it before cooking. I Removed anything inside and the skin. I made this meal in a crock pot, which is great when you've got no time!!! Cooking/prep time depends on settings on crock pot, or if you would rather a stove.
Cook chicken with onion and water in crock pot until chicken is thoroughly cooked, remove all bones and strain to remove extra fats and bone shards. Drain stock from chicken or you can keep the stock for a soupier consistency. Once chicken is thoroughly cooked, add canned tomatoes, carrots, creamed corn and sweet potato. Cook until the sweet potato is soft and the ingredients blend together. Add peas 10 minutes before eating, so they do not get mushy. Salt and pepper to taste, season as you like.
