KK's Beef Tinga

2.0 lb Beef chuckSalt n pepper1/4 cup Flour 3 tbsp Corn Oil1 lb Chorizo, casing removed1 large Onion, chopped4 clove Garlic, minced or grated1 can beef stock or consumme 1 can fire roasted Diced Tomatoes1.0 tbsp Honey1-2 tbsp Chipotle in adobo
Pat meat dry, cut into 1 1/2 inch cubes, salt n pepper, then dredge in flour. In a large, oven safe Dutch oven on medium high heat, brown beef and set aside on plate.
Brown chorizo in same pan. Add onion, garlic, and seasonings. Cook about 5 minutes. Add rest of ingredients, bring to a boil, cover and cook in oven for 90 minutes. Shred beef.
Add to warm flour tortillas, with lime wedges, queso fresco, jalapenos, and thinly sliced red onions.
