Creamy Chick’n and Quinoa Casserole

Ingredients
24 oz Almond Breeze Almond Milk, Unsweetened Original, shelf stable 1 package (10 oz) Peas, frozen 1 package (10 oz) Broccoli, frozen 14 serving Bragg - Premium Nutritional Yeast Seasoning (1Tbsp/5g) 3 cup (8 fl oz) Chicken Broth 5 slice, medium (1/8" thick) Onions, raw 6 cup Soy curls 2 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
Directions
Soak soycurls in vegan broth for 10 minutes. Use half of broth in crockpot. Add quinoa and chopped onions to bottom of crockpot. Add rest of ingredients (including favorite spices. I used garlic, onion powder, black and red pepper, basil.) cook on low 5 1/2 hrs. Serve with favorite vegan cheese.
