Italian Spaghetti Salad

Ingredients
1/2 box of 14 oz whole grain spaghetti1 can Italian diced tomatoes1.5 tbsp olive oil1 tbsp cider vinegar1 64g can sliced olives1/2 green bell pepper, chopped1/2 cucumber, peeled, chopped1/3 C chopped green onion3 cloves pressed or minced garlicParmesan cheese (optional)
Directions
Prepare spaghetti as directed and cool.
In the bowl you plan to serve/store your salad in, mix together: Can of tomatoes (mostly drained), olives (drained), olive oil, vinegar, green pepper, cucumber, garlic and onion. Mix in cooled spaghetti. Season to taste. Serve with or without Parmesan cheese. Makes 16, 1/2 C. servings.
