1 1/2 cups red grapefruit choose, preferably from fresh fruit 1/2 cup orange juice, preferable freshJuice of 1 lime (about 2 tablespoons)1 tablespoon heavy cream4 tablespoons unsalted butter, cut into small piecesSalt and pepper to taste
Put juices in saucepan and bring to a boil then simmer until reduced to about 1/2 cup (about 15 to 20 minutes. Decrease heat to low and add cream, whisking to incorporate. Slowly add butter pieces, whisking after each addition until emulsified. Add salt and pepper to taste. Keep on very low heat if necessary to keep sauce warm.
