Lentil Apple salad

Ingredients
2.5 cup Lentils, cooked 1 cup, chopped Onions, raw 1 cup, diced Celery, raw .5 cup (not packed) Raisins 1 cup, quartered or chopped Apples, fresh with skin .5 cup Mayonnaise, regular (mayo) .5 cup Sour Cream 1 tsp Salt .5 tsp Pepper, black 1 tsp Curry powder
Directions
1cup dry lentils rinsed and cooked in 3 cups water for 18 minutes-yields 2.5 cups lentils. Drain - let cool. When chopping apple(s) soak them in lemon water-then drain. The lemon water adds an extra flavor dimension plus preserves the color of the apples. Add onions, celery, apples, raisins to the lentils. Mix mayonnaise, sour cream & seasonings. Pour over lentil mixture & refrigerate for several hours.
I prepped veggies & apples the night before; cook the lentils the next morning(or the next evening after getting home from work...drain & let cool for an hour or so) then mix everything together.
Plain yogurt can be substituted for sour cream.
