Super Easy Low-Cal Chicken Vegetable Soup

Ingredients
4 cups water1 raw boneless, skinless chicken thigh (frozen is fine)1 serving Trader Joe's Savory Broth - Chicken Flavor (or similar)3 cups thinly sliced carrots 2 cups thinly sliced celery 2 dried bay leaves.5 tsp salt 1 tsp black pepper 1 cup frozen spinach Fresh lemon juice to taste
Directions
1. Put water in pot or rice cooker over medium heat.
2. Add frozen or thawed chicken thigh, savory broth packet, carrots, celery, bay leaf, salt and pepper.
3. Bring to a gentle simmer for 10-15 minutes, or until the chicken is cooked through. Remove the chicken thigh and cut it into bite-size pieces, then return it to the pot.
4. Add frozen spinach, let warm through.

Serve with lemon juice to taste.
