Tomato - Herb Orzo Toss

Ingredients
1 cup uncooked orzo pasta 2 cloves garlic, crushed 1 cup tomato juice 3/4 cup water1 medium zucchini, diced1 medium carrot, diced1/2 medium red pepper, diced2 tbsp fresh basil, shredded1/2 tbsp dried oreganoblack pepper to taste
Directions
Stir orzo into a hot, dry nonstick, pan.
Cook 2 minutes, then add garlic. Cook 1 minute longer.
Pour in the juice and water. Bring to a boil.
Reduce heat to low and simmer (uncovered) 7 minutes.
Stir in, zucchini, carrot and pepper.
Cook 7 minutes longer, or until liquid has been absorbed and orzo is tender.
Stir in herbs and pepper. Serve.
