Low Carb Lemon Cheesecake Bars

Ingredients
5 large Eggs1 cup Bob's Red Mill Almond Meal/Flour1 serving Stevia 1/4 cup Coconut Oil 1/2 tsp Salt 1 tsp Baking Powder 16 oz Cream Cheese 1 tsp Vanilla Extract 3 tsp Lemon Extract
Directions
For crust:

In a mixing bowl, combine 2 eggs, melted coconut oil, stevia, almond flour, salt and baking powder. Beat until all ingredients are well blended.

Line a 10 by 13 pan with parchment paper. Add mixture to the pan and smooth out with a spoon until it completely covers the bottom of the pan and is even. (Hint: I used my fingers and pressed it into the pan. It helps to dampen your finger tips in cold water.) Now bake at 325 degrees for 20 minutes.

While the crust is baking complete the filling.

FILLING:

In a mixing bowl add cream cheese, eggs, vanilla, stevia and lemon and mix thoroughly. When the crust is done add this mixture to your pan and bake at 325 degrees for 45 minutes.

When it's done baking put into refrigerator for 2 to 4 hours until firm. Cut into 24 pieces.
