1 cup Bob's Red Mill Organic Whole grain Quinoa (dry) 2 cups water 1 15oz can black beans -no salt added drained and rinsed1 15 oz can Sweet Whole Kernel Corn, No Salt Added 1 bell pepper, red, sweet, raw dicedfor dressing:2 tbsp Lime Juice (juice of 1 lime) 1 1/2 tsp Cumin - Ground 1/3 cup Canola, Vegetable (soybean) or Olive Oil1/4 cup chopped cilantro if you can tolerate it, or parsley2 serving Herb Ox Sodium Free Chicken Granulated Bouillon
Cook quinoa according to package directions. Some brands like Bob's are pre-rinsed, if not make sure to rinse thoroughly. Boil water, add quinoa (and sodium free bouillion powder if desired), return to boil, cover tightly, reduce heat and cook for about 12 minutes. Remove from heat let stand 15 minutes. Fluff with fork and let cool. then add next three ingredients, mix dressing, pour over and stir to mix thoroughly. Chill
