Quinoa Beet Mango Salad

0.3 cup Traditional Whole Grain Quinoa dry 1 Mangos 4 beets (2" dia), fresh Juice of 1 lime 4 tbsp Balsamic Vinegar reduction
1. Cook the quinoa as per instructions. Set aside.
2. Peel and cut the beets in small cubes. Roast in the oven (300F) for about one hour- or until beets are cooked.
3. Meanwhile, cut the mango in small cubes.
4. Before mixing all the ingredients together, let it cool down to room temperature.
5. Add salt and fresh basil (if desired)
