Spinach tomato cheese crusted fritata

Ingredients
10 Egg- large1 Tomatoes, sliced thin (~12 slices) 1 package (10 oz) fresh Spinach4 Parmesan Folio wraps1/2 cup Best Choice Fat Free Shredded Mozzarella cheese 1 1/2 cup kraft american & cheddar shredded cheese
Directions
Preheat oven to 400°. Heat oven safe pan on med-med/high heat, lightly saute spinach till starting to wilt (will continue cooking in oven). Remove from heat. Place all 4 folios wraps to cover bottom of the pan and heat till melted and starting to crisp on the bottom. Turn down the heat and start layering your fritata.. Start with tomatoes, then spinach, then pour your eggs over everything and top with shredded cheeses. When eggs are starting to firm on the bottom, move to the oven for 15 minutes.
Fritata will puff up and look dry with cheese grease in the middle when it's done. Let rest for 10 min, then flip over onto plate/cutting board, slice into 6 pieces and dive in! Don't forget yo salt each layer.
