Curried Sweet potato, lentil, and chicken soup

Ingredients
2 Tbl extra virgin olive oil1 onion, chopped3 cloves garlic, chopped1 c frozen green beans4 stalks celery, chopped2 c sweet potato5 vegetable bouillon cubes5 c water1&1/2 c white rice, uncooked1&1/2 c lentils, uncooked2 tsp curry powder1 c chicken breast, cubed1/2 c apple juice
Directions
In a saucepan, heat oil over medium heat and add the onion, garlic, green beans, celery and chicken and cook until chicken is cooked through..


In a large sauce pan, heat sweet potatoes, apple juice, bouillon and water to boiling over medium-high heat.


Stir the onion mixture into the sweet potato mixture and return to a boil. Add the rice, lentils and curry powder and cook until lentils and rice are done.
