WHITE BEAN CILANTRO LIME SOUP

Ingredients
0.50 tsp Pepper, black 0.50 fruit (2" dia) Limes 3 tsp Garlic 0.50 cup, chopped Onions, raw 1 tbsp Extra Virgin Olive Oil 1 cup Peruvian Beans - Dry (Peruanos) 0.25 cup Cilantro, Fresh (Chopped Stems and Leaves) 2 gram(s) Knorr Caldo de Pollo Cube (by SUNNYDAYDAYCARE) 6 cup (8 fl oz) Water, tap
Directions
Soak beans overnight.

In a pressure cooker, combine the oil, onion, and garlic. When onions and garlic cook down a bit, add the drained beans and lime zest. Cook for another minute or two.

Add in the bouillon, pepper, water and lime juice.

Cover with a lid and bring to 15psi. cook for 40 minutes. Use the quick release.

Cool slightly and, using a blender, carefully pulse 3/4 of soup until smooth and then mix with remaining soup. Stir in chopped cilantro.
