White Beans and Spinach

Ingredients
1 can (15.5 ounces) Cannellini beans, rinsed and drained6 cups fresh baby spinach leaves2 teaspoons extra virgin olive oil (optional)salt and pepper to taste
Directions
Heat a 10 inch nonstick skillet over medium heat. Add the drained and rinsed beans and heat through. Add the spinach and toss to combine. Add the olive oil (if needed and amount to taste) and toss until spinach is softened but remains dark green. Add salt and pepper to taste.

Serving Size: Makes 4 servings of 3/4 cup each
