Creamy Lemon Dessert

2 14.5 oz. cans of lite canned pears (no added sugar, not in heavy syrup) drained, reserve liquid2 3oz. pkgs. of sugar free lemon jello1 8oz. pkg. of fat free cream cheese2 tbsp. of lemon juice1 container of lite Cool Whip
Bring pear liquid to a boil in a saucepan. Remove from heat and stir in gelatin until dissolved. It helps to use a whisk. Let sit at room temperature or place in fridge until syrupy. Chop pears into small pieces. In a mixing bowl, beat cream cheese and lemon juice until smooth. Add pureed pears and mix well. Fold Cool Whip into pear mixture. Fold in cooled gelatin. Gently blend until well mixed. Pour into sprayed 9x12 baking pan. Chill in freezer for 30 minutes then transfer to fridge, or chill in fridge overnight. Cut into bars. I usually cut into thirds the long way, and fifths the short way, leaving 15 5" bars.
NOTE: Try with different flavors of gelatin or fat free cool whip. Serve on individual plates with a small dollop of whip and a raspberry or blueberry on top to dress it up.
