Asparagus &Leek Soup

1.5 cup Leeks 2 tbsp Olive Oil 8 spear, medium (5-1/4" to 7" lo Asparagus, fresh 2 clove Garlic 1.5 cup Kitchen Basic Vegetable Stock (by IAMDIOSA) .5 cup Coconut Milk (Silk)
Heat a large pan to fry leek and garlic in oil for 45 minutes, or until leak has softened.
Add asparagus and stock to pan, cover, and cook for an additional 15 minutes, or until asparagus has softened.
Remove from heat and add coconut milk.
Use a hand blender or food processor to purée the soup before serving.
Serving Size: Makes 2 generous servings
