Sautéed Zucchini and Cherry Tomatoes

Ingredients
2 tbsp Olive Oil 1 cup Red Onion, diced4 cups Zucchini, cut into 1/2 inch chunks1 cup cherry, halved 2 cloves Garlic1 tsp Salt 1/4 tsp Black Pepper1 tbsp Basil, chopped
Directions
Heat olive oil over medium heat in a large sauté pan. Add the red onions and cook, stirring frequently, until very soft.

Add the zucchini, tomatoes, garlic, salt and pepper. Cook for about 3 to 5 minutes. Cook until the zucchini is still firm and the tomatoes have collapsed. Stir in the basil. Remove from heat.
