Keto yeast dough

Ingredients
.3 ounce Yeast, bakers 1.75 cup Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g) .25 tsp Granulated Sugar 70 grams Vital wheat gluten 1 tsp Salt 1 tbsp Extra Virgin Olive Oil
Directions
Mix yeast and sugar with 3 tbsp warm water to proof. Mix Almond flour and wheat gluten. When yeast is activated, add to flours along with salt and olive oil and mix. Add 1/2 to 3/4 cup warm water to dough until firm enough to knead. Knead 10 minutes, then put in covered bowl and rise 1 hour. Knead one more minute, then put in desired pan, cover, and rise 1 hour. Bake at 350. For pizza, bake for 20 minutes. For loaf, bake for 50 minutes.
