Ingredients5 tablespoons butter 1/8 cup sugar 1/2 tablespoon lemon zest 1/2 teaspoon ground nutmeg 1/8 cup honey 1/2 egg 1/2 cup finely grated raw sweet potato 1 1/4 cups all-purpose flour 3/4 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt Lemon Glaze1/2 teaspoon butter 1/2-1 teaspoon lemon juice 3/4 cup powdered sugar 1/2 tablespoon water
Directions
1Cream together butter and sugar in bowl. Blend in lemon zest, nutmeg, honey and egg. Fold in sweet potato.
2In separate bowl. sift flour, baking powder, baking soda and salt.
3Add it to the first mixture and blend well.
4Arrange cookie dough by rounded teaspoons on ungreased cookie sheet.
5Bake at 350 degrees for 7 minutes.
6To make glaze, use a wooden spoon to combine all ingredients in glass container until smooth.
7Add more water by the drop until glaze is easy to spread on cooled cookies.

I LOVE LOVE LOVE these cookies. My daughter's girl scout troop made these for World Thinking Day last year & they were a huge hit! I had forgotten how much I liked them until I made them again today. I would never guess they had sweet potatoes in them. They have a great light lemony flavor instead! - 1/20/10
