Dr. Pepper Chicken

6 thigh, bone and skin removed Chicken Thigh 1 serving *Diet Dr. Pepper (12 oz) 2 can (6 oz) Tomato Paste 4 tablespoon balsamic vinegar 2 serving Garlic - minced (1 tsp) (by ELLERCADE) 1 tbsp minced onions (by GRANDCRACKER) 1 tbsp Butter, unsalted
In a large skillet, melt butter and begin to saute garlic and onions over medium heat. Add chicken thighs and sear both sides for about a minute each. Add tomato paste, vinegar and Diet Dr. Pepper. Stir to combine, making sure chicken thighs are covered with sauce. Add water if necessary. Bring to a boil. Reduce heat and cover, let simmer for about 30 minutes. Then uncover, raise to high heat until a meat thermometer in the thickest part of the chicken reads 165. Cool slightly and serve.
