Zucchini and Sausage Frittata

Ingredients
8 oz Smoked Sausage - Beef 2 tbsp Extra Virgin Olive Oil 2 cup, sliced Zucchini 3/4 cup, chopped Onions, raw 1/8 tsp Salt 1/8 tsp Pepper, black 8 Large Eggs, beaten 2 oz cheddar cheese, shredded
Directions
Remove sausage from casings. Cut into small pieces.

Heat oil in a medium non-stick ovenproof skillet over medium-high heat. Cook the sausage for 3-5 minutes. Add the zucchini, onions, salt, and pepper and continue cooking, stirring often, until tender, 8-10 minutes. (If you want the zucchini very tender, cover the skillet during the last 2 minutes of cooking.)

Remove from heat and stir in the eggs and cheese. Place in a 400 degree F oven and cook until just set, 10-13 minutes.
