Ingredients
2 cup, chopped Carrots, raw 3 stalk, large (11"-12" long) Celery, raw 4 medium (2-1/4" to 3-1/4" dia.) Potato, raw 2 cup, cubes Butternut Squash 1 tsp Pampered Chef - Southwestern Seasoning Mix, 1/2 tsp 1 tbsp Extra Virgin Olive Oil
Directions
put olive oil and seasoning in a storage bag, prepare veggies and cut into cubes. put veggies in the bag with olive oil and seasoning and shake until all of the veggies are covered with oil and seasoning. put veggies on a cooking sheet, I put aluminum foil on it for easy cleanup
