Tomato Rice with Chicken

Ingredients
2 lbs. Tyson boneless, skinless chicken breast, diced4 whole Green Onions, minced2 large tomatoes, diced2 cloves garlic, peeled and minced2 Tbsp fresh basil, minced2 cups quick cook brown rice (not instant)1 8oz. Package Neufchatel Cheese4 Tbsp Parmesan Cheese, shredded0.5 tsp Salt0.5 tsp Pepper, black2 tsp Olive Oil4 cups water
Directions
1. Add all ingredients except chicken and Olive oil to a 4 quart pot and bring to a boil. 2. Reduce heat to low, cover, and simmer for 15-20 minutes until all water is absorbed and rice is tender. Stir occasionally. 3. Meanwhile, heat the Olive oil in a heavy skillet. 4. Liberally sprinkle the chicken with additional salt and pepper. 5. Add chicken to skillet and cook until juices run clear. 6. Reduce heat to low, add rice mixture to cooked chicken. Add cheeses. Gently stir until cheese melts and combines. Serve hot.
