Priya's Mooli ka Paratha - Gluten Free

Ingredients
0.75 cups Daikon Radish, water squeezed out and reserved0.5 cup Jowar flour (sorghum)0.5 cup White rice flour0.25 cup Besan flour (chickpea flour) 1 tsp Table salt2 tbsp Sunflower oil Pinch of asafoetida (hing) 0.5 tsp Ajwain seed (caraway)0.5 tsp Red chili powder 0.25 tsp Ground turmeric20 sprigs of chopped cilantro
Directions
1. Grate the mooli and squeeze out the water until the mooli is dry. Reserve the water from the mooli.
2. Boil ½ cup water with the mooli water on high temperature, add Jowar, and set burner to low for two minutes. Stir until mixed well.
3. While the jowar is boiling, mix the rest of the dry ingredients until blended.
4. Mix the jowar with the dry ingredients. If necessary, add 1 tablespoons sunflower oil and / or very little warm water to moisten the dough.
5. Add the mooli and cilantro and knead until everything is completely mixed and the paratha is of the correct consistency.
6. Form into a ball and cover with a wet cloth to rest for 10 – 15 minutes.
7. Divide the dough into eight equal portions and roll into balls. Place on a tawa and cook for about 2 minutes on each side until cooked through and lightly browned on each side.
