1pound boneless, skinless chicken breast 1pound boneless skinless chicken legs/thighs 2 cups Safeway Select Garlic Lovers SalsaSalt
Brine the chicken in a bowl of water and a handful of salt. Brine for at least 15 minutes and up to 2 hours. If you are starting with raw chicken, this step will also defrost your chicken.
Drain and pat dry the chicken. Place it in the crockpot along with the salsa. Sprinkle a little more salt (maybe a 1/2 tsp) and then stir to mix well. Cook on low for 6-8 hours, or until the chicken shreds easily.
