Black Bean Burgers

Ingredients
2 15- to 16-ounce cans black beans, rinsed, drained1/2 cup chopped red onion1 egg2 cloves garlic1/2 cup dry breadcrumbs4 tablespoons bottled chunky salsa 1/2 cup bottled chunky salsa1 teaspoon ground cumin
Directions
Using food processor, mash beans and garlic in medium bowl. Hand mix in onion, peppers, breadcrumbs, egg, 4 tablespoons salsa and cumin. Season with salt and pepper. Using moistened hands, shape bean mixture into two 3- to 4-inch-diameter patties.

Prepare grill (medium-high heat) or preheat broiler. Brush tin foil with oil or spray with Pam. Grill burgers on foil until heated through, about 3 minutes per side.

Grill cut sides of buns until lightly toasted, about 1 minute. Transfer burgers to bottom halves of buns. Spoon 1/4 cup salsa over each. Cover with tops of buns.

    Delicious. My first shot at black bean burgers and they were terrific, I put them in the fridge for a couple hours per JESSMGC's advice and they were very easy to work with. - 1/22/09

    I made these black bean burgers tonight for company. I loved them! We put a little avocado and FF sour cream on top. Delish! Oh, and I let them set in the fridge for a couple of hours before grilling and I didn't have any problems with fragility. - 8/4/08
