3 cups Chicken Broth 8 tbsp Salsa, Herdez Salsa Casera Mexicana Picante 32 oz (2 lbs.) Chicken Thighs- Organic skinless boneless1.5 cups Brown Rice, medium grain 2 cups, sliced Zucchini 1 cup Chayote squash, boiled (optional) Cheese to add in at the end of cooking time or use as a garnish. (Not part of the calorie calculations.)
Combine ingredients in crock pot. Add any additional spices or veggies you would like. Cook on low for 6-8 hours or high for 3-4 hours. Like a casserole, feel free to add cheese at the end of the cooking time. Serve with salad or fresh veggies.
