Lemon Garlic Rice

Ingredients
1 garlic clove(or 2 if you really like garlic)1tbsp finely chopped onion1 can chicken broth and top up with water to 2 cups2 C Minute Rice(whole grain)1-2 tbsp Lemon juice1-2 tbsp dried parsley2 tsp butter or margarine
Directions
In a saucepan saute garlic and onion with butter for 2-3 minutes. Add broth and bring to a full boil. Stir in rice and remove from heat. After 5-10 minutes, stir in lemon juice and parsley and serve. An excellent side dish with fish or poultry.

    I made 1/2 this recipe and used 1T of lime juice (to go with my lime chicken) but next time will do it with 2 T. The flavor was quite good so next time I will bump it by using even more juice. Will definately make this again. - 5/3/11
