Vegetable Soup with 3 Cheese Tortellini

Ingredients
1 cup uncooked Three cheese Tortellini3 cups low sodium chicken broth1/2 cup diced onions2 cloves garlic, diced3 medium tomatoes, diced2 cups zucchini, cubed1 cup carrots, sliced1 cup celery, sliced2 bay leaves, whole1 dash of salt and pepper to taste
Directions
In a seperate pot, prepare the Tortellini as per instructions.
In a large soup pot combine chicken broth, onion, garlic, bay leaves and tomatoes and bring to a boil. Add other vegetables and boil on medium heat for ten minutes. Add salt and pepper to taste. Add tortellini and let simmer for two minutes, just enough time for the tortellini to absorb a bit of the soups flavor.
Serve and enjoy!

    This was really good. My husband enjoyed it also. I’d never had zucchini in soup before. Only change was I added some fresh basil and a small amount of hot spice. - 6/29/21

    I love this soup because of all the vegetable servings! Delicious and somewhat cheesy. It is indeed very hearty. Added chicken to make the husband happy, but I would have it without the chicken. - 7/23/07
