Mumzy's Four Bean Soup w/sweet potato

Ingredients
800 gram(s) Edgell Four Bean Mix (by MSOATES1) 1 cup, chopped Onions, raw 1 cup, chopped Carrots, raw 1 cup, chopped Green Peppers (bell peppers) 1 cup, cubes Sweet potato 8 cup (8 fl oz) Water, tap 4 serving Beef stock cube (Knorr) (by NOME__) 1 tbsp Italian Spice (by SLIDOG) 1 tsp Paprika 1 tsp Crushed Chili Pepper Flakes (by NALANI12) 1 tbsp Parsley
Directions
Spray 2qt pot with cooking spray
Chop veggies (reserve the sweet potato)
Saute til tender
Rinse and drain beans Add to pot
Add spices (Optional)
Add water and beef stock cubes
Cook over medium heat slow boil for appprx 45mins til beans are more tender
Add sweet potato cook additional approx 20mins til tender not mushy
Salt and Pepper to taste (optional)
