Slow Cooker Fiesta Black Bean Soup

Ingredients
6 cups of Chicken Broth (Low Sodium & Fat Free)3/4 lb Potatoes, peeled and diced16 oz of Black Beans, drained12 oz Corn, fresh or frozen1/2 lb ham, diced1/2 of an onion, diced4 oz of chopped Jalapeno Peppers2 cloves garlic, minced2 tsp dried oregano leaves2 tsp dried cilantro leaves1 and 1/2 tsp dried thyme leaves1 tsp ground cuminsour cream for garnishdiced green or red peppers for garnish
Directions
Throw all ingredients together (expept for garnish) in a crock-pot. Cover on LOW 8 to 10 hours or on HIGH 4 to 5 hours. Garnish if desired.

    I made mine without potatoes but added a can of diced tomatoes with green chilis. I also eleiminated the jalapenos and added green peppers. I really enjoyed this and it is quite filling. Will make it again! - 3/12/08

    used dry beans cooked myself, and a dash of liquid smoke flavor to replace the ham, and cut out quite bit of sodium - 6/12/08

    I used what I had on hand; 3 chicken breasts, 1/2butternut squash in place of the potato. Added some leftover roasted veggies, doubled the garlic and beans and added a can of fire roasted diced tomatoes!
