Balsamic Tuna Salad

1 can yellowfin tuna in olive oil (genova tonno, crown prince natural, etc)2.5 oz reduced fat feta2 small-med campari tomatoes1 clove garlic.25 c. red onion, chopped1 small carrot, chopped.5 small granny smith apple, chopped1 tsp olive oil1 tsp raw flax seedseveral twists of black pepper
mix it all up
add about 1/3 mixture to a whole wheat tortilla laid out with mixed greens, use to top cuts of crusty bread, or eat alone.
this is not a low-fat recipe, but it is rich in good fats and protein and very flavorful!
makes roughly 3.5-4 servings if eating with salad greens and/or bread, 2-3 servings if eating alone.
