Greek Baked Zucchini

Ingredients
4 lg tomatoes, peeled & chopped1 clove garlic, minced1/2 c. olive oil1 tsp. sugar1/2 tsp. dried oregano1/2 tsp mint, driedsalt/pepper to taste6 cups sliced zucchini (1/4 inch thick)2 med. onions, sliced4 oz. feta cheese1/2 c bread crumbs1 T. margarine
Directions
Preheat oven to 350 F. Combine first 7 ingredients in large mixing bowl. Grease a 9 x 13 x 2 inch baking dish. Layer zucchini, tomato mixture and onions. Crumble feta cheese, sprinkle with bread crumbs and dot with margarine. Bake for 45 minutes until squash is tender. Serves 6
