French Onion Soup

2 tbs butter, unsalted2 cups onions, thinly sliced and separated32 ozs beef broth (I use Pacific Foods Organic Beef Broth)1 tsp Worcestershire sauce (I use Lea & Perrins)1 oz dry sherry (I use Holland House)1 oz red wine (I use Holland House)1 dash pepper20 croutons (28 grams) - I like Fresh Gourmet Organic Seasoned Croutons4 slices Swiss cheese (19 grams each)
In a saucepan, melt butter over low heat and add the onions; stir to coat. Cook over medium-low until the onions are tender and translucent. Slowly add broth, Worcestershire sauce, sherry, wine and pepper. Simmer 15 mins.
Ladle soup into broiler safe serving bowls. Divide croutons evenly and a top each bowl with a slice of cheese. Place under broiler until cheese is bubbly. Allow to cool slightly before serving.
