1 lb baking potatoes, peeled and cut into ½ strips1 teaspoon salt½ teaspoon sugar4 teaspoon oil1 teaspoon paprika
Soaking the potatoes in a salt/sugar solution draws out some of the water so they brown rather than steam in the oven
1. Preheat oven to 450 F, spray a nonstick baking with sheet with nonstick spray
2. In a large bowl combine the potatoes, 1/4 teaspoon of the salt and sugar with cold water to soak. Soak 15 minutes and blot dry.
3. In another large bowl toss the potatoes with the oil and paprika. Place in a single layer on the baking sheet. Bake, turning the potatoes over as they brown, until cooked through and crisp about 45 minutes. Sprinkle with the remaining salt.
