Ingredients
1.50 cup Salsa 1 medium (2-1/2" dia) Onions, raw 3 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, sweet, red, fresh 1 - 15 oz can Del Monte Diced Tomatoes, No Salt Added 4 cup Uncle Bens Whole Grain Medley Quinoa Brown rice 2 tbsp Mrs. Dash Salt Free Taco Seasoning 1.25 cup cheese - shredded taco cheese 24 oz (1.5 lb) Turkey, Ground turkey, 93% lean
Directions
Cook Peppers and onions in a little EVOO with salt and pepper till tender. Remove from pan. Cook ground turkey, add taco seasoning (salt free) when cooked add 1 can of diced tomatoes (salt free). Put rice in 5 lunch containers, place in veggies and meat, cheese and salsa. Put in fridge.
